Capsicum chinense, commonly known as the habanero pepper, is renowned for its culinary and medicinal value due to a great abundance of polyphenolic compounds. The pursuit eco-friendly methods extracting these metabolites, which produce high-purity extracts applicable food pharmaceutical sectors, has led adoption green technologies such supercritical fluid extraction (SFE). In this methodology, by manipulating factors like temperature, pressure, time, goal producing with elevated phenolic content from plant materials can be achieved. study, central compound design (CCD) was conducted response surface methodology (RSM) optimize polyphenols chinense using fluids. optimal conditions total polyphenol were determined 63.1 °C, 1161.82 psi, an time 132 min, (TPC) 1870 mg gallic acid equivalent (GAE)/100 g extract. Additionally, concentration several individual optimized, including catechin (236.27 mg/100 extract, 62.8 1150 min), chlorogenic (447.08 131.9 vanillic (136.38 41.9 diosmin + hesperidin (92.80 63 3200 rutin (40 63.03 among others.
